Wanting something that will last, if taken care of, and not crazy expensive. Willing to spend the money for quality, but don’t need chef quality, I don’t think.
Henkels great knives get the ones made in Germany. I’ve had a set for 20 years my daughter wants them when I die!!!

In 1992 I bought a set of Henckels Professional S knife set with block for my youngest uncle and his wife for their wedding. I still remember it was $440 and a lot of money for me back then. I was 18 and making around $350 a week. He said it was the coolest gift they got, being that some others that made 10x what I made gave $50 gifts.
After 28 years and 2 ex-wives he still has the full set and talks about them often.
