Good knives
Beater knives
2 of the good ones (the 2 new ones) are carbon steel and prone to rust. They will take some care to maintain. But they're supposed to take an edge better and retain it longer. The middle one is stainless and I've had it for 4 or 5 years and haven't sharpened it until yesterday. It was still way sharper than any store bought knife I've had.
They have some individual knives in the few thousand dollar range if you wanna go all out! Lol
