It's a weird mix of gelatin made from the hooves and other cartilage plus pieces of jowls and brain, and it used to be cured just like cheese. Weird thing is the gelatin is clear, but tough enough you can slice it like cheese. There's a place in Austell called Patak that sells it sometimes. Great place for interesting meat at phenomenal prices.
