I cheated and made both of those with Chuck roasts. Little easier to work with than a whole brisket. Although I do have a whole brisket in the freezer, just takes more planning.

And the ones I want are more expensive than the ones I have lol...
I keep getting emails and the ones I want are mid $400
Hard to justify...but then again, I do all the cooking...hmmm
