This is a yearly tradition for me! I have been turning a lot of people onto gator with this recipe!
To start with... find you some gator meat! I have had luck with small butcher shops. It usually runs $13-$15 a pound. Most of the time it comes in 1lb frozen bags. I have found a butcher in Macon that sells it by 5lb bags.
I like to soak it in butter milk and hot sauce for 24hrs. 2 parts milk to 1 part hot sauce.
Once it has soaked, strain it.
I then mix up 1 1/2c flour with 1 cup of Louisiana Fish Fry and 2tbspn of Tony Chachere's Creole Seasoning
Give the nuggets a good coating of breading.
Drop the nuggets in some hot grease! They will only take about 4-5mins to fry up, usually once they float!
I've been enjoying it with some homemade copycat BK Zesty sauce.
