its easy. i just redid my entire house and it was just me an my wife. there are a few areas that could be better but comparing it to what i would have paid someone and i'd still do it myself.
i went with vinyl plank flooring though which was much easier from my understanding. I'd look at it over laminate.
But for both you'll jsut need the flooring tools homedepot sales and i'd highly recommend a miter saw
My friend does flooring installation for a living. Said he'll charge $2.50/sq ft to install. I've known him since middle school...he was a CPA until like a year ago.
