
Seared Sea Scallops on a Bed of Fried Spinach with Soy Mollasses Drizzle
Ingredients:
- Sea Scallops
- Spinach
- 1 Tbl Molasses
- 1 tsp Soy Sauce
- 2 Tbl of butter
- 2 Tbl of EVOO
- Salt
- Pepper
Directions:
- Heat 2 Tbl of butter and EVOO in a skillet on high.
- Season Scallops with salt and pepper.
- When oil begins to smoke, place Scallops on skillet 90-120 seconds per side until a nice brown crisp forms on the Scallop.
- Toss spinach into butter and oil mixture and fry for approx 2-3 mins until spinach becomes crispy.
- Take spinach out of the oil and pat dry gently with a paper towel removing excess oil.
- Place spinach on a plate and seat the Scallops on top.
- Mix 1 Tbl of molasses with 1 tsp of soy.
- Take soy molasses mix and lightly drizzle over top of plate.
- Serve and enjoy!
