Gaging interest... I'm about to make s set of stainless chefs knives. Blades in the 8" to 10" range. Handle material is whatever wood you want, so long as I've got it. Price is $75 shipped with a professional heat treat by Peter's. Final hardness is going to be requested at 60 to 61 Rockwell C. Pretty much the upper limit for max wear resistance.

Trying to see if i can sell 4 or 5 of these to offset the $200 heat treat cost plus steel cost, abrasive cost, etc.

I’ve realized that my chefs knives suck with the exception of ONE Henckels 6” so, YES. Please!

This group is all thin serrated trash I never use.
Here’s the “better” knives, but none are a true chef’s knife.
I need to toss some of this trash.
